Lemon desserts are Joe's favorite so I am ALWAYS on the lookout for new recipes. I came across these lemon crinkle cookies and they are the perfect lemon cookie! They are super easy and quick to make. I love when cookies start with a cake mix. And the lemon zest really amps up the fresh lemon taste. The girls love helping mix them up and rolling them in the sugar to finish. And they especially love eating them up when they are out of the oven! Joe has given them his lemon lover stamp of approval also, which is high praise!!!!

Line a baking sheet with parchment paper, set aside. Preheat oven to 350 degrees. In a bowl, combine your cake mix, eggs, and oil. Fold in lemon zest. Stir in 1-2 drops of food coloring.
Roll batter into 1-1.5 inch spheres. Roll in granulated sugar, then icing sugar. Place on lined baking sheet, 2 inches apart.
Bake for 8 to 10 minutes and cool on rack. Enjoy!

Ingredients
- 1 cake box mix
- 2 eggs
- 1/3 cup oil
- Zest of half a lemon
- Yellow gel food coloring
- 1/3 cup granulated sugar, in a small bowl
- 1/3 cup icing sugar, in a small bowl
Instructions
- Line a baking sheet with parchment paper, set aside. Preheat oven to 350 degrees.
- Stir your cake mix, eggs, and oil. Once thoroughly combined, add lemon zest and fold.
- Add 1 to 2 small drops of food coloring and stir.
- Once everything is mixed together, roll into 1-1.5 inch spheres and coat with granulated sugar. Then coat with icing sugar. Place on lined baking sheet, about 2 inches apart from one another.
- Bake for 8 to 10 minutes and cool on rack. Enjoy!
