Hey y'all!  Are you starting to feel as overwhelmed as I am with Thanksgiving and Christmas just around the corner?!  I can't even look at the calendar without breaking into a cold sweat thinking about all I have to do.  And then I remember this little thing called PERSPECTIVE.  I remember that the holidays are supposed to be about spending quality time with loved ones, not slaving over time intensive and complicated meals and buying presents.

This year, I am going to try to hang on to that perspective the entire holiday season by focusing on quick and easy meals that allow me to spend more time with my husband and young twin girls who are growing up way too quickly for my taste.  This skillet pasta and meatballs dish is our favorite quick and easy meal!  It's quick to cook and uses only one skillet, so clean up is a breeze.  It makes two complete meals for our family of four and tastes great reheated.  Best of all, Attley and Avery love it as much as we do, so it ensures dinner time is drama free.  {Can I get an Amen for that?!}  Without our girls complaining that chicken “isn't their favorite” we are able to just talk and enjoy all of the hilarious things that come out of the mouths of 4 year olds :)

Ingredients

  • 1 pound Fusilli pasta, uncooked
  • 2 Tbsp olive oil
  • 1 bag frozen meatballs (16 ounces)
  • 1 medium onion, diced
  • 1 tsp minced garlic
  • 1 jar Bertolli® pasta sauce
  • 2 cans chicken broth
  • 1 cup water
  • 1/2 to 1 tsp crushed red pepper flakes, to taste
  • 8 oz fresh mozzarella, cut in to cubes
  • Fresh basil, chopped

Cooking Instructions:

1. In a large skillet, saute your garlic and onion in olive oil until your onion is soft.

2.  Next, add your uncooked pasta, frozen meatballs, pasta sauce, chicken broth, water, and crushed red pepper.  Stir it until all of your ingredients are combined.

3.  Cook your dish on high heat until it comes to a boil.  Then cover your skillet and reduce it to a simmer.  Simmer for 20 minutes.

4.  While your skillet pasta is cooking, chop your basil and cut your mozzarella cheese into cubes.

5.  Remove your dish from heat.  Scatter your mozzarella cubes and chopped basil on top of your hot dish.  Cover it with your lid and let it sit until the cheese melts.
